Ridiculously Easy Baked Falafel Burgers

Veggies burgers make a great Sunday night dinner. I was looking for a new recipe, found a recipe for falafel burgers, didn't have all the ingredients so I changed it up and made this!


2 cans of garbanzo beans
1 cup of oats
2 tablespoons of flax meal
1 tablespoon cumin
2 tablespoons dried parsley
1-2 teaspoons onion powder
2-3 tablespoons of lemon
1/8 - 1/4 teaspoon cayenne pepper
Garlic to taste (I used ~1 medium clove)
Salt to taste (I used about 1 teaspoon with unsalted garbanzo beans)
A little of the garbanzo bean liquid (from the can) may be necessary for the mix… (I used about 1/4 of a cup, but add it slowly--a tablespoon at a time.)

Put the garbanzo beans and the oats in the food process to process them first. Add EVERYTHING ELSE in at once and processed until well mixed and very smooth in texture. (You may need to add a little of the liquid from the garbanzo beans.)

Form into patties and bake at 350 for 15-20 minutes flipping half-way through.

This recipe made 10 medium patties. They had a great texture and held together very well. They weren't too moist, so they cooked up really well, too.

Here they are right before the oven.


Serve with hummus on top if you like. (We had tomatoes and pickles, too. The girls did ketchup and vegan mayo.)

The nice thing about this recipe is that you can make it and then make hummus in the food processor WITHOUT washing. It is very exciting to me when I can make 2 things in the same food processor or blender without a wash in between… What does that say about me?


Oh wow… I just went back to this recipe. How funny. I made this new recipe from another site, but it is so similar! I guess there are only so many ways to make a garbanzo bean burger.

Dixie Pie Bites

When I was in high school, I worked at this restaurant and they made pies. One of their pies was called Dixie Pie. It was mighty tasty. It was walnuts, chocolate chips, with a pecan pie filling… I loved that pie.  

I found a recipe for raw "pecan pie" bites and decided to mix it up a little and make "Dixie Pie Bites."


Ingredients


1.5 cups, packed, pitted dates (Make sure there are no pits! Tonight's pitted dates had 3 pits in them! We always cut them to double check.)
3/4 cup pecans
3/4 cup walnuts
1/2 -1 tsp sea salt
1 tsp pure vanilla extract
1/4 -1/2 cup dark chocolate chips

Instructions

Place all ingredients in a food processor.
Mix until it forms a dough.
Remove and roll into balls.
Store in the fridge.
Make 10-12 balls.

Or, if you're feeling lazy pour all the "dough" on a wax paper sheet and roll it into a thin layer. Cut into small squares. 

I think Dixie Pie has rum in it, so these don't quite mimic the pie, but they are super tasty.  I love them, probably as much as I used to love the pie, so I shall name them Dixie Pie Bites in honor of that (unhealthy) pie.

Homemade thin mints



A few days ago, I found this recipe. I knew I needed to make it. The Sweet Life's recipe was very simple:

2 sticks (1 cup) vegan butter (I use Earth Balance buttery sticks)
1 cup powdered sugar
1 cup dutch processed cocoa powder
1/2 tsp salt
1 tsp vanilla extract
1 1/4 cup flour

You start with whipping the butter and powdered sugar, then add the cocoa, salt, vanilla extract and whip until smooth. After, slowly add the flour and mix well. I love a recipe where I can use my Kitchen Aid and not worry about over beating!  I suggest reading the Sweet Life's Recipe instructions if you want better directions.

Roll the dough to 1/4 inch thick.
Cut the cookies out with round cookie cutters.
Place on baking sheets on either parchment or a silicone pan liner.
Bake for ~12 minutes.

Cool.

Dip in melted chocolate. Melt 1 and 1/2 bags of dark chocolate chips (what it took for us to coat our 30 very large cookies), 2 teaspoons peppermint extract, and 1.5 tablespoons vegan butter.

Melt the 3 ingredients together in a double boiler, after your cookies are cool.  (I stuck the cookies in the refrigerator for 1/2 hour.) I placed each cookie in the melted chocolate and carefully removed it with a spoon. I had to scoop some more chocolate on some and smear it around carefully. I let the cookies harden on wax paper and stuck them in the refrigerator.

Next time I make them, I stick some peppermint extract in the dough, too--not much, probably 1 teaspoon to get a hint throughout the cookie. Also, next time, I'll have a smaller round cookie cutter.

These are very good cookies. They are not healthy in any way. (Happy birthday to me!)
