Zucchini

It's that time of year again!  

This year, I made a roasted zucchini hummus instead of a raw zucchini hummus.  All I did was slice the zucchini, brush it with olive oil, and then roast it for about 40 minutes.  When it cooled, I made the hummus with the recipe on the previous page with the slight exception of cutting back on the tahini.  

We've also made zucchini bread (3x I think) -- Nick's specialty, roasted zucchini with pasta sauce, and a raw hummus.  The zucchini hummus (roasted or raw) is a very good pasta sauce!  

I'm looking for more zucchini recipes.  I have 2 very large ones sitting on my calendar.  Maybe my friend wants one (or two).  

In sad news, our apricot tree isn't doing so well and we didn't get any apricots from it.  Well, I guess we got about 10, but that's pretty sad considering we were getting so many a couple of years ago

Now with MORE green

Matcha is expensive, but it's cheaper than a Starbuck's habit and Dr. Gregor says it is SUPER good for you! (Click to watch a short video.)

(And this video tells you that it's okay to drink up to ten cups of tea a day.)  (Whew! I'm about 1/2 that.)

Green lunch

I've been getting rid of my plastic containers for lunches.  It's expensive to go all stainless, but over time I've been buying different pieces. I try out a style by buying one of a particular style. If I like it, I go back and buy more of that style, if not, I'm not stuck with a ton of what I don't like. They look so pretty! One good thing is that stainless steel containers don't really break, so as long as the girls don't lose them, we'll have them for a long time.

If you need a last minute gift idea for a fun Holiday gift for the person who likes "green" stuff, I recommend little stainless steel containers!

Plant-based

I don't call myself a vegan even though it's been years since I ate an animal product. I also try really hard not to buy leather, wool, or silk clothes, furniture, carpet, etc. I still have the leather things I bought before going plant-based, but when they are worn, I won't buy more animal-based products.* Now, since we've just moved, I've been trying to buy new furniture and rugs that are plant-based, but it's hard. I have a feeling it's going to take a long while to find a couch I like for our (completely empty except for the boxes we haven't unpacked) living room.

But! I've just found a jute rug I love!  It's here. We got the sangria-colored one. It's now making a corner of the upper hall more cozy! It's very soft. I was worried that it would be sort of rough. I got this jute one, too, but it's not nearly as soft. It'll work fine in the hallway, but it can't go in our bedroom as I'd hoped. Though I can't say how these rugs will wear, since I've only had them for a couple of days, I will say that the initial quality of them seems good.

I'm going to document the furniture / rug finds I come across on this blog 'cause it's hard to find good stuff that's plant-based and I think it falls under a "green" category.




*I have an exception. I will buy leather dance shoes 'cause there isn't a synthetic alternative for tap that is as good as the leather ones. (I'm not a great dancer, but I'm "okay" and the shoes do matter. As soon as there's an alternative that works, I'll be switch.)

Salad

It's my lunch pretty much every day when I'm at work. This time, I forgot peas. Dressing-wise, I don't eat dressing, but instead, salsa and guacamole.  I tend to pour balsamic vinegar on it and mix it all up. Super yummy! What's your favorite salad?
